when using this product to get the wild taste out of deer sausage, should I refrigerate a day or 2 before smoking for best results, or smoke same day

Most of your seasonings you will find that they recommend hang in cooler time of 24hrs.It allows all the spices to blend and penetrate the meat throughly but also allows a partiall binding process.Some distrubutors offer special meat binders which allows you to stuff and place directly in smoker.A big factor of the wild game taste can be illiminated by proper processing.Ive been in the meat trades for around 25yrs + and dont even use my meat saw I bone my deer out entirely removing all silver,brisell and glands.As a matter of fact all my customers are now requesting this process because they enjoy the much milder taste.A few things to keep in mind.Temp of the outdoors when harvested. gut shot. Breaking of the urine sak.Or a rutted buck will tend to produce a STRONG WILD GAME FLAVOR at which I bring attention to my customers and recommend very spicy flavor profile.Im not one to add any more products than what is needed.
