How are the inner soles constructed?

Like, do they arch supports, etc.?

Arch support is minimal and the interior of the show is poorly constructed.

These mocs do not have any special arch supports. They include a normal footpad, but nothing else besides the mold underneath.

Not sure, but they are very comfortable. I did not to add any other insoles to the shoes. I love mine

The insoles have minimal arch supports but they are very comfortable. After a long day of wearing, walking, etc. my feet feel just like they did in the morning.

I own two pair, and they are not waterproof. They are water resistant.

I haven't had any issues with water as far as wet grass goes, but I don't think I would submerge them. The bottom of the elastic is only about 3" off the ground, so they are pretty vulnerable to much water no matter how good the leather is.

I am not sure if they are available in size 11.5. I normally wear size 9.5, but the 8.5 I have in these mocs are a little loose. They seem to run big.
